Rum

Paranubes Blanco is a blend of four different cane varietals, with 85% of that blend being Caña Criolla. The most commonly planted variety of cane in the region, it has the highest sugar content, thereby producing the highest yield. It also lasts the longest in the field (up to six months), once it reaches maturity. Like Caña Morada Single Varietal, this expression can only be produced when Jose Luis has a clean empty tank after producing a batch of Paranube Blanco. As such, these single varietal expressions are produced regularly, but in a limited, seasonal capacity.

Caña Criolla has incredibly rich savory notes along with over-ripe tropical fruit and a peppery grassy nose.

Created by finishing fully matured cask strength maker's mark, then ten specially seared French oak staves (the staves profile being number 46) are inserted into the barrels and stored in cool temp controlled limestone cellar for 9 weeks to intesify the flavor without adding any bitterness.

A mix of 79% Rye and 21% wheat whisky, aged 3-4 years in ex-bourbon barrels then finished in 3 separate casks for their specific flavour profiles. First is in a toasted oak for soft vanilla, amburana for warm cinnamon spice and lastly in a tawny port for the rich depth of brown sugar and raisin. You end up smelling vanilla frosting and tasting lots of baking spices. It's rich and decadent, good for sipping on with desert or as the last course itself.

However, what sets it apart is its filtration process, often referred to as the "Lincoln County Process," which involves filtering the whiskey through charcoal before it is aged. This unique step imparts a smoother, mellower taste compared to typical bourbons.
