Pechuga is a style of Mezcal where a piece of protein, spices and seasonal fruits are placed in a basket and hung in the distillation chamber during the final distillation of the mezcal. The vapours of the mezcal pass through the meat and fruit, taking on notes and adding depth to the fruit. These are often made to celebrate or mark significant life events, such as birthdays, weddings or celebrations of life.
