Montagave Blanco 'Las Rocas' is a tequila that incorporates traditional winemaking techniques into its production process. After double distillation in the lowlands of Jalisco, the spirit is cooked in a brick oven for 72 hours, fermented in concrete tanks for 96 hours, double distilled in pot stills, then rested for four weeks in a custom-made 10-ton concrete egg, a method inspired by an old world winemaking that finishes the spirit at 45% ABV. This unconventional resting period subtly raises the pH, enhancing minerality and allowing gentle micro-oxygenation to improve structure and mouthfeel. There are aromas of citrus and agave, with rich flavours of mint, cinnamon, and olive. This tequila is grewat for sipping neat, over ice or enjoyed in cocktails.
