Lobo de la Sierra Maximiliana

100% Agave maximiliana, a wild species endemic to the Sierra Occidental of Jalisco. The agaves are harvested and then cooked for 3–4 days in above-ground adobe ovens fueled by black oak wood. Using wild and natural fermentation processes in oak vats, then is double distilled in stainless steel alembic stills, powered by wood and then gas. Aroma of spun sugar, with notes of orange zest, resin and hay ending with a juicy finish.
