A highly regarded, low-intervention white wine produced by Haywire Winery (Okanagan Crush Pad) Organic-certified, high-altitude site (487 meters) with alluvial, gravel, and limestone soils.
Whole-cluster pressed; wild/native yeast fermentation in neutral French oak puncheons and concrete tanks; aged on the lees for 10 months; unfiltered.
Aromas of ripe peach, lemon zest, Bartlett pear, and subtle vanilla wafer notes from concrete egg contact.
Medium-bodied and powerful yet restrained. It features pure flavours of smooth pear, citrus, honey, and light baking spice that is creamy and richly textured from extended lees contact, perfectly balanced by a stark, refreshing acidic core and distinct stony minerality.
