Blue Weber agave from the Tequila Valley is cooked in traditional stone and brick ovens; then, the agave hearts are crushed with a 'tahona' - a wheel made from volcanic rock. Spring water is then added to the crushed agave. It is then fermented using wild yeast in a cement tank and made traditionally, producing an unadulterated, additive-free agave spirit. This method yields a tequila with a pronounced cooked agave scent complemented by notes of mint and citrus. The flavour profile is lightly sweet and herbal, characteristic of the lowland Tequila region.
