Manuel Salcedo Gutiérrez is a longtime figure in the raicilla community: he has served as president of the Consejo Mexicano Promotor de la Raicilla and is described as a third-generation raicillero with more than 33 years of experience.
This is 100% Maximiliana, which is one of the defining agaves of the Sierra Occidental raicilla tradition.
Agave maximiliana is quite different from the Agave tequilana used for tequila. Raicilla production in this region makes use of a much broader diversity of agaves, and a maximiliana is particularly associated with the Sierra Occidental.
