Maestro Delfino uses a single-pass, three-plate "reflux" style still that he crafted himself from copper and stainless steel. The nose on this mezcal has hints of cinnamon, plump cherries, red Airheads and under-ripe tropical fruit. The palate has notes of gingerbread, strawberry shortcake, and peppermint.
