Ode to Sappho Sparkling Red ~ Ursa Major

Varieties: Marechal Foch
Origin: Hancock Vineyard, Naramata, BC
Very gently basket pressed into a stainless steel tank where the juice went through a wild fermentation with an open top. After a very active wild ferment, the wine was racked off of gross lees, then bottled with a small amount of sugar to kick off the secondary fermentation in bottle. The wine was then riddled and disgorged with an added 20ppm of sulphur.

Palate - red licorice, sour cherry, ocean spray cranberry, pomegranite
